Day 2 turns into Day 3

Well, the plan to blog every single day fell by the waistside. Sometimes life just gets in the way...but I am back on track with much to report. Yesterday's adventures turned into figuring out the most amazing fakeout alfredo sauce ever. Even those of you who only keep beer and frozen chicken breasts around the house can handle this (your know who you are!) and will be very surprised by the results. I even got some good pics during the cooking process, but with the way my life goes I grabbed the antiquated Kodak camera that saved the pics to internal memory. So much like the Geek Squad Cookbook Retrieval adventure, the pics will have to wait. On a side note, the cookbook is final coming back from the Geeks in Minnesota, it only took two months to retrieve it from what they referred to as a Level 2 incident in the sterile data room (what is this, ICS 300? Ugh). Lesson learned: do NOT save important documents to a USB drive, they aren't Tori-Proof. To seal off the day, I installed my first dishwasher. And Station 40 did not have to respond. And I have picture proof for those who can hardly believe such a thing is possible once I can figure out how to upload those too :) Some days are better than others. Try this extremely easy recipe and let me know how it goes.

 Fakeout Alfredo Sauce


1/2 lb small pasta
1 tbsp butter
1 tbsp olive oil
1/2 yellow onioin, diced small
1/2 cup half and half
1/2 cup reserved pasta water
1/2 cup chicken broth
1/2 bag frozen peas
1/2 cup grated parmesan cheese
S&P to taste


Boil the pasta according to the directions (make sure you salt the water liberally after it comes to a boil), and before draining them save 1/2 cup of pasta water.


While the pasta is cooking: in a large saucepan, add the butter and olive oil and heat over medium high heat until melted. Add the diced onion, and cook until softened (about 2-3 minutes). Add the half and half, pasta water, and chicken broth and bring to a boil over high heat. Add in pasta, peas, and parmesan cheese, reduce heat to medium low and allow to simmer. Cook 2-3 more minutes, stirring frequently,  until sauce thickens and peas are cooked through. Season with salt and pepper to taste. Serve hot in a bowl with additional parmesan cheese.
